Skirlie


This is my very modern take on a traditional Scottish dish called skirlie. A basic skirlie is fat, oats, salt and pepper, from what I gather. It can be eaten alone, as a side dish, as a stuffing, etc.

2 Cups salted water for cooking oats
1 1/2 Cups oats of your choice, I like old fashioned oats best and I think instant oatmeal would be gross
3 Tablespoons butter
1/2 Onion, diced
1 Green bell pepper, diced
1 large package frozen spinach, thawed, drained, and chopped
4 eggs, beaten
1/2 cup shredded cheese of your choice, we like pepper jack
Salt and pepper to taste

Boil water and then add oats. Cook about 5 minutes, until water is absorbed. Keep on low once finished until everything else is cooked.

Melt butter in large pan, add onions and bell pepper. Cook till tender. Add spinach and stir. Push mixture to one half of pan. Add eggs, salt, and pepper. Once eggs are cooked turn heat to low and stir again, adding in the oats and cheese. Cook on low till the cheese is all melted.

This makes a substantial and filling breakfast for very little cost. It was a hit with the hubby and the two year old, so it's a home run in my book!
